Thank you for teaching me to not be so judgmental.
Thank you for reminding me to be humble and forcing me to realize I am not defined by my career (or lack there of) and that I am not defined by my education.
Thank you for showing me that a poor attitude only produces negativity & that you will get back whatever energy you put out into the world.
Thank you for being the year I became a runner.
Thank you for being the year I celebrated my first anniversary with the love of my life.
And thank you for bringing me to Hawaii! That being said…
My Mantra for 2011 is
Live a courageous life.
That means taking pride in what I have to offer the world – whatever it may be – and letting go of the fear of being judged. A quote I love and I have written on a note that I carry in my wallet reads Treat yourself as if you already are what you’d like to become. I plan on making the most out of the lessons 2010 has taught me & move on to make the most of every opportunity that 2011 presents.

A jar of almond butter costs 8 bucks…
raw almonds cost about 3 bucks…
and the other day I bought a mini food processor for 20 bucks.
Why does any of this matter? Because for a $20 food processor investment I can now make my favorite food at home for less than half the price it costs in the grocery store!
Raw Almond Butter!
I am obsessed with almond butter. I eat it for breakfast with a banana at least every other day. But it is really expensive. At the H.E.B. in Texas it’d cost about $6 for a container, but here in Hawaii (where everything is more expensive) it ranges from $8-$11. Considering how much of it I eat I had to find an alternative & I was so excited when I discovered the power of the food processor!
All you need is 1-2 cups of unsalted
raw roasted almonds, a food processor & some patience.
Put 1-2 cups almonds in the food processor & pulse on hi for 10-12 min or until it reaches a smooth consistency. You’ll have to scrape the sides from time to time as well.
It takes a while but it’s so worth it.
I also tried using cocoa roasted almonds but it was a little too sweet for me. Almond butter – so healthy & so yummy!
With the new year just a few days away I’ve been coming up with some goals & resolutions for 2011. I’ve always found that making an inspiration collage can be therapeutic and encouraging and when The Fitnessista recommended doing one for the New Year, I thought it was a great idea. My goals for this year are aimed at striving for my personal best in everything I do.
Although a lot of my resolutions are fitness related, the most important things on my list are finishing my Masters Degree & getting a job!
Candace’s 2011 New Years Resolutions:
- Finish Masters Degree
- Get a job!!!!!!
- Run my first full marathon
- Learn to surf
- Cook at least three times a week
- Commit to a new fitness class (probably yoga)
- Drink less vino
- Develop my blog
- Volunteer at least once a month
It’s a pretty hefty list, but I’m feeling ambitious. I’m living in a beautiful part of the world and I want to take advantage of every minute of it!

I was so excited to get a Lululemon gift card for Christmas. I’ve been coveting their workout gear for months, but had never even been to an actual store until we got to Hawaii. I spent over an hour in the store this morning, figuring out the different fits until I decided on a pair of running shorts and a fitness tank. I could have easily gone over my gift card budget but I dug deep and found some restraint 😉
I really never put much thought into having nice workout clothes until recently. I like to think of it as little extra nudge of motivation when I’ve got something cute & comfortable to wear vs. the threadbare cotton Soffe shorts I’ve had since high school cheerleading.
The Wellness Journal is a great tool to keep a training schedule. This one is particularly handy & has already got me setting new goals and marathon training plans for the new year.
I’m also really excited about all the super affordable outdoor adventures the Hickam MWR (Morale Welfare & Recreation) Center offers. They offer surfing lessons, paddleboard lessons, moonlight hikes, even spear fishing! I am seriously so excited about this. They’ve got a full calendar of events for January so I’m planning for a great start to the new year.
Also, Don & I celebrate our 1 year anniversary tomorrow!
I can’t believe it’s already been a year! I am the luckiest woman in the world. To know that I’m going to spend the rest of my life with my soul mate, my best friend – is a feeling I can’t put into words. I love you Don! ❤

Merry Christmas Eve. Or should I say Mele Kalikimaka 😉
We spent the afternoon at a Flight Christmas Party & I was thinking of family back home the whole time. It’s my first Christmas away from home so even though we are in paradise, it’s a little tough to be away from the family.
Back in November I got to help put up the Christmas tree at my parents house with my niece Olivia, so right now I’m reminiscing over that.
We also got to stop in Dallas Texas for an evening, on our way to Hawaii, where we got to catch up with my Aunt June who lives in Texas. We went to the ICE display at the Gaylord Hotel and to my surprise the theme of the display was my ultimate favorite Christmas movie ever, A Charlie Brown Christmas.
And even though I am really missing my family, I’m thinking of the wonderful blue crab dinner Mimi & Papa made for Don & I the night before we left. So in a way it was like our mini early Christmas Eve dinner with family.
For now Don & I are going to curl up next to our mini Christmas tree that my sister-in-law Jen made for us last year. Since we just moved we didn’t really have time for a life size tree but I love our mini tree 🙂 Unitl tomorrow…Merry Christmas!

Don & I hiked up Diamond Head State Monument today. It was beautiful.
We made it up and back in 1 hour (the map-guide said it’d take 2). I spotted a few people run/hiking so naturally I want to try & run it now. I’m going to need to run it if I don’t keep my holiday appetite in check. I’ve eaten about a bagillion Christmas cookies so I’m thinking it’s going to catch up with me in short order.
For now I’m off to prepare some homemade mashed potatoes and other such things for the Flight Christmas party tomorrow!
