Organic, Delicious, Raw & Nutritious…Guacamole

Before I discovered my love for avocados, I only knew guacamole as a Mexican food condiment/chip dip prepared with sour cream or mayonnaise.  Now that I know the goodness of avocados plain & simple, the thought of putting mayo in guacamole makes me gag.

So I thought I’d share the most simple and delicious way I prepare guacamole. It’s not earth shattering – it’s pretty darn basic – but veggie colors are pretty, photogenic, and definitely blog worthy.

Ingredients

3 medium to large local or organic avocados peeled & chopped

1/2 red onion finely chopped

2-3 local or organic roma tomatoes seeded & chopped

handful of fresh organic cilantro

squeeze of fresh lime juice

1 tsp garlic powder

salt & pepper to taste

Step one: Chop up your avocado

Step two: Chop up your tomatoes

Step three: Ok, this is getting redundant – you know what to do

Step Four: Finely chop that delicious smelling cilantro

Step Five: Add lime juice, garlic powder, S&P and mash it up (aka – get in your arm workout for the day)

Last: Enjoy your guac with celery, or chips, or fajitas, or tacos, or in a sandwich, or with a spoon straight out of the bowl…

    That’s exactly how we make it and we love guacamole.

    Julia wrote an essay last year on how much she loves avocados, so one of her teachers always called her the avocado girl.

    The only difference is that we use white onion. I’m not sure how the red onion would change the flavor.

    We have been making a lot of Greek salads lately.
